a special variation of the traditional Purim treat!
Ingredients:
For the dough:
• 250 g flour
• 1 teaspoon baking powder
• ½ teaspoon salt
• 100 g cold butter (diced)
• 1 egg
• 2 tablespoons cold water
For the filling:
• 1 garlic bulb
• 150 g feta
• 50 g cream cheese
• 1 teaspoon honey
• ½ teaspoon thyme (fresh or dried)
• ½ teaspoon lemon zest
• Pepper to taste
Preparation:
Roast garlic: Preheat the oven to 200 °C. Cut the tip off the garlic bulb, drizzle with a little olive oil, wrap in aluminum foil and bake for about 30-40 minutes until the garlic is soft. Then let it cool and squeeze out the soft cloves.
Prepare the dough: Mix the flour, baking powder and salt in a bowl. Work in the cold butter until the dough is crumbly. Add the egg and cold water and knead into a smooth dough. Wrap in cling film and chill for 30 minutes.
Prepare the filling: Mix the roasted garlic with feta, cream cheese, honey, thyme, lemon zest and pepper until creamy.
Forming Hamantaschen: Roll out the dough to a thickness of approx. 3 mm and cut out circles (diameter approx. 8 cm). Place 1 teaspoon of filling in the middle of each and fold the edges into a triangle.
Baking: Place the pockets on a baking tray lined with baking paper and bake at 180 °C (top/bottom heat) for approx. 15-18 minutes until golden brown.
Tip:
These hearty Hamantaschen taste particularly good warm and go perfectly with a yogurt dip with fresh herbs.
